I first found the guilt free 2 ingredient pancake (banana+egg) when researching protein packed breakfast options for my daughter. Turned out she hated them. But I thought it was delicious! The pancakes remind me more of french toast. The banana makes them sweet and moist. It is so easy to mix in different ingredients and include different add ins to change up the flavor profile. The possibilities are endless.
